<p>One of the best parts of carving jack-o-lanterns is saving the seeds for roasting! I can’t ever decide between savory or sweet, so I usually do a little bit of each. Here I am sharing my favorite sweet recipe for roasted pumpkin seeds. You only use a few ingredients and it’s very simple as always! Check out the recipe below and let me know if you try it!</p>

<h2 class="wp-block-heading" id="pumpkin-pie-spice-roasted-pumpkin-seeds">Pumpkin Pie Spice Roasted Pumpkin Seeds</h2>



<p class="has-text-align-center">2 cups seeds</p>



<p class="has-text-align-center">3 TBS coconut oil, melted</p>



<p class="has-text-align-center">2 tsp pumpkin pie spice </p>



<p class="has-text-align-center">2 tsp cinnamon </p>



<p class="has-text-align-center">2 tsp sugar (or coconut sugar)</p>



<p>1. Rinse seeds and remove pumpkin pulp.</p>



<p>2. Boil seeds for 10 minutes and let them cool and dry for 30 minutes to one hour. </p>



<p>3. Mix all ingredients in a bowl and add seeds. Stir well, coating seeds evenly with mixture.</p>



<p>4. Spread in one layer on a cookie sheet and bake. 300 degrees for 15 minutes. Stir. Bake another 15 minutes. Stir. </p>



<p>5. Increase heat to 325 degrees and bake for 5 more minutes. Let cool. Enjoy! </p>

<p>Even though Thanksgiving is later this year than usual, it’s sneaking up on me! It’s crazy that it’s less than one week away! </p>



<p>As you know, I like a good tablescape and I love a good napkin fold! If you didn’t know, napkin folding is kinda my thing. It’s an easy way to make guests feel special, it’s free, and surprisingly most are pretty simple to create! </p>



<p>On this post I’m gonna show you a super simple way to create a pumpkin napkin fold and I’m doing it on video! I really think you’ll like this and it’s just in time for Thanksgiving! </p>

<p>Halloween season just isn’t complete at our house without carving a pumpkin&#8230; or 2! This year we decided to carve 2, and put a popular hack to the test! In 2019 the #1 way to preserve your jack-o-lantern (according to the internet &#8211; so it must be true, lol) is to soak the pumpkin in bleach after it’s carved, then spritz it with a lemon juice &amp; vinegar solution.  We gathered what we needed and got to work.  </p>

<p>The kids were excited that since we were carving two, they could each choose a design. Clark (7) decided to freehand his, while P (4) picked out one from the book. </p>

<p>Clark was serious about his. He was all in 100% by himself&#8230; trust me I had absolutely nothing to do with how his turned out. Penelope flipped past all the bats, cats and traditional jack-o-lantern faces and settled on this fabulous skull on fire. She was so proud&#8230; my precious, blonde princess called her flaming skull “brilliant”! I can’t make this stuff up! </p>

<p>Once they were carved, we were ready for the experiment! We chose to soak Clark’s pumpkin in the bleach water solution and leave P’s alone. </p>

<p>After the pumpkin is totally dry (we let ours sit overnight) spray it with a solution of vinegar, water &amp; lemon juice. Let that air dry and it’s done! </p>

<p>Both pumpkins will be kept on the front porch until Halloween night. That is less than 10 days away (10 days is a normal life-span of a Jack-o-lantern) and we’ll compare them then! </p>
