<p class="wp-block-paragraph">I threw together this Halloween taco bar and ran with the &#8220;day of the dead&#8221; theme. It was a small get-together, but it was fun and special! The best thing about the decor was&#8230; I didn&#8217;t buy a thing! I used party items and Halloween decor I&#8217;ve had for years! I hope it gives you a few ideas too!</p>

<p class="wp-block-paragraph"><strong>Paleo Zuppa Toscana</strong><br />1/2 cup chopped onion<br />2 TBS avocado oil<br />3/4 lb ground beef<br />3/4 lb Italian sausage<br />1 TBS garlic<br />6 cups chicken broth<br />3/4 cup lite coconut milk<br />24 oz cauliflower florets<br />1 bunch kale</p>



<ol class="wp-block-list"><li>Sauté onion, garlic, beef and sausage in oil until meat is browned.</li><li>Add broth, coconut milk and cauliflower. Simmer covered 10 minutes.</li><li>Add chopped kale. Simmer covered 5 minutes. Serve!</li></ol>



<p class="wp-block-paragraph">Salt and pepper to taste, add red pepper flakes and bacon bits if you want!</p>

<p class="wp-block-paragraph">It’s absurd to even call this a recipe, laughable really. But maybe it’ll give you a family-friendly meal idea to add to your collection. It’s simple, quick, inexpensive and kids love it! </p>



<p class="has-text-align-center wp-block-paragraph"><strong>Ingredients</strong> </p>



<p class="has-text-align-center wp-block-paragraph"><strong>3 lbs. ground meat</strong> (beef, turkey or deer)</p>



<p class="has-text-align-center wp-block-paragraph"><strong>1 can corn</strong> </p>



<p class="has-text-align-center wp-block-paragraph"><strong>1 can black beans</strong> </p>



<p class="has-text-align-center wp-block-paragraph"><strong>1/3 cup <a href="http://shebloomscreative.com/homemade-taco-seasoning">homemade taco seasoning</a></strong> (or 2 packets of store-bought taco seasoning, my favorite is Thrive Market)</p>



<p class="has-text-align-center wp-block-paragraph">1. Brown the ground meat in a deep skillet. </p>



<p class="has-text-align-center wp-block-paragraph">2. Drain the meat if needed. Add 1/2 cup of water and taco seasoning. Mix.</p>



<p class="has-text-align-center wp-block-paragraph">3. Drain the corn and add it to the meat. Stir.</p>



<p class="has-text-align-center wp-block-paragraph">4. Drain and rinse the black beans. Add them to the meat mixture. Stir.</p>



<p class="has-text-align-center wp-block-paragraph">5. Let simmer on low for 10-15 minutes. </p>



<p class="has-text-align-center wp-block-paragraph">6. Enjoy it a million ways! </p>

<p class="wp-block-paragraph">That’s it! 5 basic steps to an easy, healthy dinner! </p>



<p class="wp-block-paragraph">Like I mentioned, we’ve been making this forever, all our babies have eaten it since they were in a high chair, (one still is!) and we all love it. We usually have “Mexican Monday” and we all eat it different ways. Adam spreads his meat on a plate, adds shredded lettuce, tomatoes, diced jalapeños and avocado and eats it with blue corn chips. I eat mine dressed like his, over salad or Siete chips. The kids eat it plain with a spoon! </p>



<p class="wp-block-paragraph">You can add cheese and fresh fixings and eat it on a crunchy taco shell, roll it in a soft taco, stuff baby bell peppers with it and bake or add beautiful toppings (cilantro, purple onion, lime) and create gourmet street tacos on corn tortillas. We’ve done all the above! </p>
