Pumpkin Spice and Coconut Sugar Roasted Pumpkin Seeds

One of the best parts of carving jack-o-lanterns is saving the seeds for roasting! I can’t ever decide between savory or sweet, so I usually do a little bit of each. Here I am sharing my favorite sweet recipe for roasted pumpkin seeds. You only use a few ingredients and it’s very simple as always! Check out the recipe below and let me know if you try it!

Pumpkin Pie Spice Roasted Pumpkin Seeds

2 cups seeds

3 TBS coconut oil, melted

2 tsp pumpkin pie spice

2 tsp cinnamon

2 tsp sugar (or coconut sugar)

1. Rinse seeds and remove pumpkin pulp.

2. Boil seeds for 10 minutes and let them cool and dry for 30 minutes to one hour.

3. Mix all ingredients in a bowl and add seeds. Stir well, coating seeds evenly with mixture.

4. Spread in one layer on a cookie sheet and bake. 300 degrees for 15 minutes. Stir. Bake another 15 minutes. Stir.

5. Increase heat to 325 degrees and bake for 5 more minutes. Let cool. Enjoy!
