Paleo Zuppa Toscana

This soup is one of the healthiest, most delicious soups on our fall menu. It’s paleo, low-carb, and full of nutrients. Simple ingredients and quick! Let me know if you try it out!

Paleo Zuppa Toscana
1/2 cup chopped onion
2 TBS avocado oil
3/4 lb ground beef
3/4 lb Italian sausage
1 TBS garlic
6 cups chicken broth
3/4 cup lite coconut milk
24 oz cauliflower florets
1 bunch kale

  1. Sauté onion, garlic, beef and sausage in oil until meat is browned.
  2. Add broth, coconut milk and cauliflower. Simmer covered 10 minutes.
  3. Add chopped kale. Simmer covered 5 minutes. Serve!

Salt and pepper to taste, add red pepper flakes and bacon bits if you want!
