Paleo Zuppa Toscana
1/2 cup chopped onion
2 TBS avocado oil
3/4 lb ground beef
3/4 lb Italian sausage
1 TBS garlic
6 cups chicken broth
3/4 cup lite coconut milk
24 oz cauliflower florets
1 bunch kale
- Sauté onion, garlic, beef and sausage in oil until meat is browned.
- Add broth, coconut milk and cauliflower. Simmer covered 10 minutes.
- Add chopped kale. Simmer covered 5 minutes. Serve!
Salt and pepper to taste, add red pepper flakes and bacon bits if you want!
