Quick Make-ahead Breakfast Sandwich – Tastes like Panera!
My husband Adam and I love the bacon and egg on ciabatta from Panera. We seem to always get it when we’re heading out of town or traveling, so it definitely reminds us of great memories!
Recently I figured out how to make a similar one at home. Adam loved it and agreed that it tastes like Panera, so I made more. Now I make a weekly batch, stick them in the freezer, and Adam thaws them out in the microwave before work!
Here’s the easy recipe:
1. Melt the cheese on one side of the English muffin in a toaster oven/oven.
2. Cook bacon and scramble the eggs. I put approximately one scrambled egg and one slice of bacon on each muffin. Keep the eggs slightly undercooked, they’ll finish cooking when they’re reheated in the microwave.
3. Assemble and wrap the sandwich in a paper towel. Bag them separately and freeze.
To thaw: In microwave, leave wrapped in paper towel. DEFROST 90 seconds, COOK 70 seconds, let sit in microwave 1-2 minutes. ENJOY!
